Cilantro Guacamole
Yield: Makes 2 cups
Ingredients
| 2 | large avocados, seeled and peeled | ||

| 1 | small tomato, finely chopped | ||
|
|
|||
| 1/2 | small red onion, finely chopped | ||
|
|
|||
| 1/2 | small red pepper, finely chopped | ||
|
|
|||
| 1 | jalapeno pepper, finely chopped | ||
|
|
|||
| 3 | Tablespoons | lime juice | |
|
|
|||
| 2 | cloves | garlic, minced | |
|
|
|||
| 1/4 | cup | cilantro, finely chopped | |
|
|
|||
| 1/2 | teaspoon | cumin | |
|
|
|||
| 1/4 | teaspoon | salt | |
|
|
|||
| Dash pepper | |||
|
|
|||
Directions:
Mash avocados in a mixing bowl. Stir in remaining ingredients. Cover and chill up to 8 hours. Serve with tortilla chips.
